This course took place October 22 to 25, 2019, at the Food Processing Development Centre in Leduc.

The course focuses on the components of the HTST (High Temperature Short Time) system, and addresses Vat pasteurization and UHT (Ultra High Temperature) processing.

It begins with an overview of milk composition and microbiology to set the stage for the conditions needed for pasteurization, cleaning and sanitizing.

It is designed for individuals in quality control, plant superintendents, pasteurizer operators, plant engineers, management, dairy consultants and individuals overseeing regulatory mandates.

Deadline to register is October 1, 2019. Registrants will receive a printed course manual before the course begins. Participants will earn a pasteurizer operator licence after successfully completing the course exam.

Alberta Agriculture and Forestry in cooperation with the Western Dairy Council conducts this course.
